Pear & Mint Granita

This dessert is healthy, refreshing and perfect for a summer night.

Pears are naturally sweet and once combined with the freshness of the mint, they create a lovely granita.

This is a great ending to any meal and most importantly, easy to make! 

Everything goes in the food processor and is done in no time.

You can substitute the fresh pears with canned pears.

 

Ingredients:

6 pears - peeled, cored and steamed

1/4 cup brown sugar

2 tablespoonss fresh lemon juice

Fresh mint leaves - large bunch, about 3 oz 

1/4 cup brandy - optional

 

Directions:

In a food processor add all the ingredients and blend until roughly smooth.

Transfer to a ziplock plastic container, (that's freezer safe), Every 2 hours use a fork to scrape the granita, until it's nice and slushy. The whole process takes a few hours. It's better to make it a day before.

Serve in a martini glass, garnish with a mint leaf and a cherry.
