Sesame Crusted Tofu Over Peas & Spinach

Tofu is one of the main sources of protein in a vegan diet. The options to work with tofu are endless. I tend to marinade the tofu, because I like the flavors to soak in. Marinating definitely makes a big difference. I created this marinade for the tofu and it goes really well with the sesame seeds, green peas, and spinach. It is a balanced meal that is packed with nutritious protein, fiber and vitamins. 

 

Ingredients:

Extra firm sprouted organic tofu 15.5oz/439g cut into triangles

Olive oil spray

Marinade:

5 tablespoons coconut water

1 tablespoon sweet chili sauce

1 tablespoon tamari

2 tablespoons seasoned rice vinegar

1/2 teaspoon Sriracha hot sauce

2 tablespoons ketchup

2 cloves of garlic minced

1 teaspoon organic mellow red miso

1/2 teaspoon turmeric

1 teaspoon grated fresh ginger

Crust:

1 cup sesame seeds

Peas and spinach:

1 package frozen organic spinach 10oz/284g - thawed and drained

3 cups frozen and thawed organic peas

1 cup coconut water

Salt

Pepper

 

Directions:

Heat oven to 375F.

Pat dry the tofu and cut into triangles.

In a mixing bowl add all the marinade ingredients.

Add the tofu to the marinade and let it sit for an hour or overnight.

Then, dip the tofu in the sesame seeds and place on a baking sheet. Spray with olive oil and bake for about 30 minutes.

Peas & spinach:

In a pot add peas, spinach, coconut water, salt and pepper- bring to a boil and turn off. Drain the liquids using a strainer.

Serving:

Scoop some peas and spinach mixture into a bowl, place the tofu on top. Serve immediately.
